Mediterranean Feta and avo stack with balsamic tomatoes

Ingredients

  • 2 thick slices of sourdough
  • olive oil spray
  • 1 avocado
  • 1/2 cup cherry tomatoes
  • 1 cup rocket leaves, washed
  • balsamic glaze

Method

Spray the bread with oil and toast it in a toaster, smear with the avocado. Top with the rocket and the cherry tomatoes and the feta. Finally dress with the balsamic glaze. Season well and serve immediately with a wedge of lemon.
