Sweet potato and Marinated Feta rostis with smoked salmon and poached egg

Ingredients

  • 1 large sweet potato, peeled and grated
  • 2 potatoes, peeled and grated
  • 1 leek, washed thoroughly and finely sliced
  • 1 small packet of French Onion Soup mix
  • 3 eggs, beaten
  • 200g smoked salmon
  • 1 tsp baby capers, washed
  • 4 eggs
  • 3 tbsp vinegar
  • 1 pre-made Hollandaise sauce

Method

Drain any excess water from the shredded vegetables. Combine the potatos, leek and eggs and season well. Add in the soup mix. Gently fold in the feta. Make four small mounds of the mix on a baking tray lined with grease proof paper and bake in a 180C oven for about 18 minutes or until cooked. Meanwhile, bring a saucepan of water to the boil and then add the vinegar. Break the eggs into the water and cook for 3 minutes. Drain. When the rostis are cooked, place them on a plate, top the rosti with a piece of smoked salmon and an egg and top with some good quality store bought Hollandaise sauce if desired.
