Breaky Panna Cotta


  • 250ml cream
  • 1/2 cup honey
  • 1/4 cup water
  • 3 tsp gelatine
  • 1 cup water
  • 4 strawberries, chopped
  • 1/4 cup blueberries
  • 1/4 cup granola
  • 1/2 cup raspberries
  • 2 tbsp honey, to serve


Spray four panna cotta moulds with olive oil and place on a tray. Heat the cream and honey over the stove on low heat and continue to stir until all the honey is dissolved. Put the boiling water in a glass bowl and whish in the gelatine until it all dissolves. Allow to cool for a few minutes. Then combine the gelatine mix and the honey cream. Allow to cool. When properly cooled, whisk in the yoghurt. Pour the mixture into the moulds and place in the fridge to set. Combine the berries. When the panna cottas are set, turn them out on to a plate and serve with the berries, a sprinkle of granola and a further drizzle of honey.
